This recipe ended up being such a powerhouse breakfast without even trying too hard. Between the organic soy milk, hemp hearts, chia seeds, yogurt, and the scoop of organic vanilla protein powder, this jar comes in at approximately 38–42 grams of protein, which is incredible for a plant-forward breakfast.

πŸ‹ Lemon
Lemon is rich in vitamin C and antioxidants and can help support hydration, digestion, and overall immune health. The fresh lemon zest especially contains fragrant oils that make the flavor really bright and fresh.

🫐 Blueberries
Blueberries are packed with antioxidants and are often considered one of the best fruits for supporting brain and cellular health. Frozen blueberries work beautifully here because they create a natural blueberry swirl overnight.

🌱 Chia Seeds
Even just a teaspoon adds fiber, omega-3 fatty acids, and minerals while helping keep you full longer. They also give overnight oats that creamy texture.

🌾 Hemp Hearts
Hemp hearts are little nutrition powerhouses. They’re rich in plant-based protein, healthy fats, magnesium, and iron, and they make these oats extra creamy and satisfying.


Ingredients

β€’ Β½ cup organic rolled oats
β€’ Β½ cup unsweetened organic
β€’ ΒΌ cup Vanilla Chamomile yogurt (or your favorite yogurt)
β€’ 1 scoop organic vanilla protein powder
β€’ 1 tsp chia seeds
β€’ 2 tbsp
β€’ Zest of Β½ organic lemon
β€’ 1–2 tsp fresh organic lemon juice
β€’ ΒΌ cup organic blueberries (fresh or frozen)
β€’ Splash organic vanilla extract
β€’ Pinch sea salt
β€’ Optional drizzle of maple syrup


Instructions

  1. Add oats, chia seeds, hemp hearts, protein powder, and sea salt to a 16-ounce mason jar.
  2. Pour in soy milk and stir well so the protein powder dissolves evenly.
  3. Add yogurt, lemon juice, lemon zest, and vanilla extract. Stir until creamy.
  4. Fold in blueberries gently.
  5. Cover and refrigerate overnight.
  6. Stir again before eating and add an extra splash of soy milk if desired.

β€’ Frozen blueberries do not need to be thawed first. Toss them in frozen and by morning they create a gorgeous blueberry swirl throughout the oats.
β€’ If using frozen berries, you may want an extra splash of soy milk in the morning since the oats can thicken overnight.
β€’ Fresh lemon zest is what gives these oats that true β€œcheesecake” flavor. Don’t skip it.
β€’ If you want your overnight oats creamier, you can absolutely adjust the milk or yogurt depending on the texture you love most β€” because texture really plays a big part here. An extra splash of soy milk will make the oats silkier and looser, while adding a little more yogurt creates an even richer, thicker cheesecake-style texture.
β€’ These are perfect for meal prep. If doubling the recipe, they’ll keep beautifully in sealed mason jars in the refrigerator for about 3 days.
